Spring is Coming: Fresh Starts, Gatherings, and Good Food

There’s something about the first warm breeze of spring that feels like a fresh start. The days start stretching out, the sun hangs around a little longer, and suddenly, we’re swapping our sweaters for sundresses and our hot coffees for iced. I don’t know about you, but spring always puts me in the mood for gathering with friends and family—backyard picnics, Easter brunches, bridal showers, and just-because-we-can get-togethers.


Spring is the season of renewal, and that goes beyond the flowers blooming and the trees coming back to life. It’s also a time to refresh our routines, embrace the outdoors, and bring people together. There’s something special about sitting outside with loved ones, enjoying a light meal, and soaking in the beauty of a season that reminds us of new beginnings.


The Joy of Spring Gatherings


One of my favorite things about this time of year is how effortlessly beautiful a spring gathering can be. The decor? Fresh flowers straight from the garden (or the grocery store—no judgment here!). The menu? Light, colorful, and bursting with fresh flavors. And the vibe? Relaxed, easy, and full of laughter.


Whether it’s a baby shower, an Easter celebration, or just an excuse to enjoy the sunshine, spring is the perfect time to gather and share a meal. Salads with berries and feta, grilled veggies, fresh lemonade—it’s all simple, delicious, and exactly what we crave as we shake off the heaviness of winter.


A Salad to Welcome Spring


Speaking of fresh flavors, one of my go-to recipes this time of year is a bright and colorful Berry & Feta Salad. It’s light yet satisfying, packed with fresh fruit, crunchy walnuts, and a tangy balsamic dressing that ties everything together. It’s the perfect dish for any spring event—whether you’re hosting or bringing a dish to share. (Bonus: It looks as beautiful as it tastes!)



Berry & Feta Salad for a Crowd (Serves 10-12)


This fresh and colorful salad combines sweet berries, crunchy walnuts, and tangy feta cheese, all tossed in a light balsamic dressing. Perfect for gatherings and potlucks!


Ingredients:


Salad:


12 cups mixed greens (spring mix, arugula, or baby spinach)


2 cups sliced strawberries


1 ½ cups blueberries


1 cup raspberries


1 ½ cups walnuts, roughly chopped


1 ½ cups crumbled feta cheese



Dressing:


½ cup olive oil


¼ cup balsamic vinegar


2 tablespoons honey or maple syrup


1 teaspoon Dijon mustard


½ teaspoon salt


¼ teaspoon black pepper




Instructions:


1. Prepare the Salad: In a large serving bowl or platter, spread the mixed greens evenly.



2. Add the Toppings: Scatter the strawberries, blueberries, and raspberries over the greens. Sprinkle the walnuts and feta cheese crumbles on top.



3. Make the Dressing: In a small jar or bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until well combined.



4. Dress & Serve: Drizzle the dressing over the salad just before serving, or serve it on the side for guests to add as desired.



5. Optional Garnishes: Add extra walnuts or fresh mint leaves for extra flavor and presentation.




This salad pairs beautifully with grilled chicken or salmon for a heartier meal. Enjoy!
