Ingredients:
6 oz ground turkey (lean protein)
1 egg white
2 tbsp grated Parmesan cheese
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper to taste
1/2 cup low-sugar marinara sauce (I prefer Rao's)
2 medium zucchini, spiralized into zoodles
1 tbsp olive oil
Fresh basil for garnish (optional)
Instructions:
Prepare the Meatballs: In a bowl, mix the ground turkey, egg white, Parmesan, garlic powder, onion powder, salt, and pepper. Form small meatballs.
Cook the Meatballs: Heat 1 tbsp olive oil in a skillet over medium heat. Add meatballs and cook for 6-8 minutes, turning occasionally until fully cooked through.
Heat Marinara: Heat the marinara sauce over medium-low heat in a separate pan.
Cook the Zoodles: Lightly sauté the zucchini noodles in a skillet for 2-3 minutes.
Assemble: Serve the turkey meatballs over the zoodles, top with marinara, and garnish with fresh basil.
